EXPLORE RECENT PAIRINGS

Italy > Sardinia > Vermentino

  •  The slight salinity in the shrimp pairs harmoniously with the wine’s minerality, creating a refreshing and effortless match

  •  The fresh basil, garlic, and Parmesan in the pesto bring out the herbaceous qualities in the Vermentino, while the wine’s bright acidity cuts through the richness of the olive oil and cheese.

  • The fennel adds a gentle, sweet anise flavor that mirrors the wine’s fresh, slightly bitter undertones, and the citrus brings out the Vermentino’s bright, zesty character.

France > Burgundy > Pinot Noir

  • The creamy goat cheese provides a tangy richness that the wine’s acidity cuts through beautifully, and the buttery crust ties it all together without overpowering the delicacy of the wine.

  • The savory herbs, including thyme and rosemary, reflect the subtle herbal notes often found in Burgundy Pinot Noir, while the wine’s acidity complements the richness of the pork.

  • The rich, gamey duck brings out the savory and earthy notes in the Pinot Noir, while the cherry reduction mirrors the wine’s red fruit flavors, creating a seamless harmony between food and wine.

France > Southern Rhône > Red Blend

  • This Grenache/Syrah blend is a perfect companion to the rich, savory flavors of cured meats like prosciutto, salami, and especially saucisson sec.

  •  Lamb and Rhône wines are a match made in heaven—Grenache’s fruit-forward qualities work wonders with the tender meat, while Syrah’s peppery, herbal backbone amplifies the rosemary and garlic.

  • The wine’s tannins hold up to the richness of the beef, while its fruit-forward profile balances out the mushrooms, onions, and carrots that create the heart of the dish.
